Die Pflanze bl\u00fcht sehr kurz \u2013 nur wenige Wochen im Jahr, und die Lebensdauer einer einzelnen Bl\u00fcte \u00fcberschreitet drei Tage nicht. Die Ernte erfolgt manuell, meist im Morgengrauen des ersten Bl\u00fctentages, was f\u00fcr die Erhaltung der Qualit\u00e4t und des Profils der aktiven Verbindungen von entscheidender Bedeutung ist.  <\/p>\n<p>Der Safran-Produktionsprozess ist \u00e4u\u00dferst arbeitsintensiv \u2013 f\u00fcr die Gewinnung von etwa 500 g Fertigrohstoff ist die manuelle Verarbeitung von bis zu 75.000 Bl\u00fcten erforderlich. Gerade die begrenzte Verf\u00fcgbarkeit, die manuelle Erntemethode und die pr\u00e4zise Trocknung bestimmen den hohen Marktwert dieses Rohstoffs. <\/p>\n<h2>Eigenschaften und aktive Inhaltsstoffe<\/h2>\n<p>Safran zeichnet sich durch eine reiche Zusammensetzung bioaktiver Substanzen aus, die seine sensorischen und funktionellen Eigenschaften bestimmen.
