Different activity grades are available, including 250 and 1200 GDU\/g.<\/p>\n<h2>Enzymatic activity<\/h2>\n<p>Bromelain activity is expressed in GDU\/g. This value describes the protein-digesting activity provided by one gram of the raw material. Higher GDU\/g values indicate greater enzymatic activity, allowing manufacturers to select the appropriate grade for their formulation and production process.<\/p>\n<h2>Bromelain applications<\/h2>\n<p>Bromelain may be used in:<\/p>\n<ul>\n<li>dietary supplements and enzyme preparations,<\/li>\n<li>products formulated to support protein digestion,<\/li>\n<li>food processing, including protein hydrolysis and meat tenderisation,<\/li>\n<li>exfoliating cosmetics and enzyme peels,<\/li>\n<li>technological processes involving the enzymatic breakdown of proteins.<\/li>\n<\/ul>\n<p>The appropriate activity grade and amount depend on the intended finished product and manufacturing conditions.<\/p>\n<h2>Product characteristics<\/h2>\n<p>Bromelain is supplied as a fine powder ranging from light yellow to cream in colour, with a characteristic odour and taste. Available grades may provide a particle size of at least 98% passing through an 80-mesh sieve.<\/p>\n<p>Quality control may cover enzymatic activity, microbiological purity, heavy metals, pesticide residues, aflatoxins and polycyclic aromatic hydrocarbons.
