Carnauba wax – properties
Carnauba wax is known as E903. Despite a name associated with chemical preservatives, carnauba wax is a natural product obtained from the leaves of the wax palm tree. It is used in the production of confectionery (chewing gum, candy, chocolate products). It is most often used to give food an inviting shine.
Carnauba wax – application
The wax can also be used to extend the shelf life of fruits by preventing them from drying out and losing their firmness, as its consumption is not hazardous to health. In combination with nisin, carnauba wax can reduce the proliferation of microorganisms, which has an additional preservative effect.
