Properties of Freeze-dried Sea Buckthorn
Freeze-dried sea buckthorn has a loose consistency and a taste and aroma characteristic of this fruit. Its color can vary from yellow through light orange to dark orange, depending on the ripeness of the raw material used. Small lumps that easily break apart under pressure are permissible.
The moisture content is a maximum of 6%. The product provides 30 g of fiber per 100 g, thus characterized by a high content of this ingredient. It does not contain genetically modified raw materials.
Applications of Freeze-dried Sea Buckthorn
Freeze-dried sea buckthorn can be consumed directly, used after rehydration, or added to food products. Halves are suitable as a visible component in mixtures and as decoration for finished products. The powder easily combines with other recipe ingredients, allowing for uniform flavoring and an orange color.
The raw material can be used in the production of:
- cakes and confectionery,
- jellies and puddings,
- ice creams and desserts,
- yogurts, cheeses, and custards,
- muesli, granola, and fruit porridges,
- tea blends,
- smoothies and instant mixes,
- bars and fruit snacks.
