The product consists of whole, dry, and loose fruits. Slight clumping is permissible, which breaks apart under finger pressure. The cherries exhibit a dark red color with a brownish hue, along with a taste and aroma characteristic of freeze-dried fruits.
Properties of Freeze-dried Cherry
Whole freeze-dried cherry has a dry, loose consistency and a characteristic cherry taste and aroma. Its color is dark red, with a brownish hue in places. Freeze-drying reduces moisture content to a maximum of 6%, while preserving the organoleptic and nutritional properties of the fruit.
The product is 100% cherry and contains no genetically modified ingredients. It provides 8.5 g of fiber per 100 g. The whole fruits retain their recognizable form, allowing them to also serve a decorative function in the finished product.
Application of Whole Freeze-dried Cherry
Freeze-dried cherry can be consumed directly as a snack, used after rehydration, or incorporated as an ingredient in food products. It imparts a characteristic cherry taste, aroma, and color to formulations.
It is used in the production of:
- cakes and confectionery,
- chocolates, pralines, and bars,
- ice creams and desserts,
- yogurts, cheeses, and puddings,
- muesli, granola, and porridges,
- jellies and fruit custards,
- tea blends,
- snacks and fruit mixes.
The whole fruit form is particularly suitable for products where the cherry is intended to remain a visible element of the formulation.
